Abstract
Biological Hazards (BIOHAZ) related to the growth of spoilage and
pathogen microorganisms in the food is an important public health
risks related to the maintenance of the cold chain during storage and
transport of meat and other food. The project MEAT BIOHAZ is addressed
at the needs of Serbian meat processing industries in the field of
safety and quality (S&Q) inspection during meat processing and
distribution. Evaluation of S&Q will be implemented by analyzing
content of gases (hydrogen sulfide, ammonia, carbon dioxide...) in the
meat products produced and distributed by South Serbia SMEs. Gases
produced by microorganisms should be an indicator of meat products'
contamination and evaluated by a multi-gas sensor device that will be
developed by the project applicant.
