Abstract
The research project aims to: i) identify the most modern and
innovative solutions in the dairy sector, in supporting of the
breeding of animals, in the production and marketing of all the
operators in the dairy chain, in improving dairy product nutritional
quality and shelf life; ii) raising the qualitative level of the
sector, providing modern and useful management tools at large scale.
Most analytical techniques (e.g., gas chromatography, ELISA, or
immuno-diffusion methods) used for measuring specific milk and cheese
components in bovine milk are expensive and time consuming, and
require skilled staff. Therefore, these methods are not feasible for
making regular measurements relating to individual and frequently
monitoring. This inconvenience can be solved by using mid-infrared
(MIR) spectrometry. This technology is already used routinely by milk
recording organizations to quantify, for instance, fat, protein and
lactose content in milk samples. Therefore, MIR and NIRS spectrometry
could be used to routinely quantify various milk and cheeses
components.
