Abstract
The project SAFEMEAT is addressed at the needs of Serbian meat processing industries in the field of safety inspection during meat processing and distribution.
Keypoints
Evaluation of quality and safety (Q&S) by analyzing content of ammonia in the meat products produced and distributed by South Serbia SMEs.
Ammonia as an indicator of meat Q&S evaluated by laser spectroscopy technique.
Goals
SAFEMEAT aims to develop and install an innovative technology of gas sensor to detect ammonia in meat products. The objectives are listed as:
1. To develop innovative non-destructive gas sensors for meat industry
2. To apply laser spectroscopy with a new method of inspection and its adaptation to measuring ammonia in different conditions.
3. To investigate the quality of meat storage and possible problems
4. To monitor the chemical and microbiological changes in meat related to gas content
5. To describe good practice to improve quality in the meat production, storage and distribution chain and reduce wasted products
6. To transfer know-out of this innovative technology to TfL, as central place to organize meat control in the South Serbia
7. Training the proper educated stuff from TfL for using the devices
8. Introducing the meat producers and distributors from the South Serbia region with a new technique for monitoring the quality and safety of their products
9. To disseminate project results toward SMEs
