Abstract
The GOOD-BY-WASTE project aims at developing models of circular economy for the production chain of some high-quality agri-food products of the southern regions of Italy, by applying a cascading use approach to one waste deriving from their production process. Wastes deriving from seven products of Puglia (globe artichoke, wine), Calabria (bergamot and Tropea onion), Sardegna (myrtle liquor and local traditional globe artichoke) and Abruzzo (olive oil) will be exploited by green recovery of high-value ingredients: antioxidants, antimicrobials, dietary fibre, fat/sugar replacers. The obtained extracts will be reintroduced in the production processes through the development of fortified/improved food products. Three out of the seven residues deriving from the extraction processes will be further exploited as fermentation substrates for green chemicals production and by mild extraction techniques, to obtain other ingredients (pectin) and cellulose, destined to non-food uses.
