One Health for food safety, food security and sustainable food production: integrating human, animal and environmental health

The COVID-19 pandemic has highlighted the extreme vulnerability of our society when unforeseen disease outbreaks happen.

The incidence of zoonotic epidemics and pandemics is predicted to increase, and this is largely attributable to a complex interplay of factors, one of which as outlined by the WHO Manifesto for a Healthy Recovery from COVID-19 (WHO, 2020), are CAFOs (Concentrated Animal Feeding Operations) and environmental degradation, that contribute to ¼ of global greenhouse gas emissions drivers.

In response to these growing threats, the World Health Organization (WHO), the Food and Agriculture Organization of the United Nations (FAO), the World Organization for Animal Health (WOAH), and the United Nations Environment Programme (UNEP) jointly established the One Health High-Level Expert Panel in 2021.

This panel defined One Health as “… an integrated, unifying approach that aims to sustainably balance and optimize the health of people, animals and ecosystems. It recognizes that the health of humans, domestic and wild animals, plants, and the wider environment (including ecosystems) are closely linked and interdependent. The approach mobilizes multiple sectors, disciplines and communities at varying levels of society to work together to foster well-being and tackle threats to health and ecosystems, while addressing the collective need for clean water, energy and air, safe and nutritious food, taking action on climate change, and contributing to sustainable development” (OHHLEP, 2023).

The interconnectedness of human, animal, and environmental health – captured by the One Health approach – has become increasingly recognized as a critical framework for addressing the anticipated transformation of our food system.

Building on these premises, this Symposium seeks to reignite the debate on the principle of mutual interdependence between human health and that of other living beings, in light of pressing global challenges, particularly food insecurity, climate change and international health emergencies among which the proliferation of zoonotic diseases (for example, COVID-19, Monkeypox, Ebola and the resurgence of Polio). Reflecting the inherently transdisciplinary nature of the One Health concept, the Symposium will bring together diverse fields of inquiry and applications, including health sciences, agricultural and food sciences, social and human sciences, to foster holistic and collaborative dialogue as well as innovative solutions for resilient and sustainable food systems.
