The research is insert as part of the dairy and wine sectors, focusing on fermentation processes. The main business is the selection of indigenous strains of malolactic bacteria, from typical cultivar grapes. The purpose is to select strains with peculiar technological characteristics, to be used for preparation and testing of new starter cultures that combine features of technological efficiency and production of positive compounds, while preserving the characteristics of the product wine. The activity includes, in the first place, the isolation, the identification and selection of strains of vinari bacteria, then a biochemical-molecular characterization and a proteomics analysis of the selected strains, in order to obtain new combinations microbial, in capable of providing a continuous improvement of the organoleptic characteristics of the finished product and sensory.

Interest areas:

The main scientific competences are in the field of microbial germplasm, related to molecular-biochemical methodologies and operating systems for the analysis of molecular-genetic. The main activity has focused on the characterization of microbial germplasm, in the agro-food production, during the fermentation processes. In particular is carried out: 1) bio-molecular and physiological characterization (fermentation of sugars, production of the ethanol, glycerol, hydrogen sulfide, aromatic substances, analysis of enzymes and proteins associated with the fermentation) of indigenous microorganisms that confer special characteristics during the alcoholic and malolactic fermentation; 2) analysis of enzymes and proteins involved in fermentation processes.
